Ingredients
- 1 cup cooked quinoa in vegetable broth
- about 2 cups vegetable broth
quinoa
- 1 TBSP olive oil
- 6 1/2 inch think round slices butternut squash
- salt and pepper to taste
- 1 TBSP butter
- 3 cloves minced garlic
- 4-6 sage leaves
- juice of 1 large orange
- 1/2 cup vegetable broth
- 2 small bunches baby broccolini
Servings: people
Instructions
- Cook quinoa in vegetable broth according to package instructions.
- Heat olive oil up in a large fry pan over medium heat
- Season butternut squash with salt and pepper and cook for 3 minutes on the first side.
- Flip squash over and add in the butter, garlic,sage, orange juice, vegetable broth and baby brocoolini. Cook for 4-5 minutes.
- Serve over cook quinoa and drizzle the pan juices over top. Enjoy!
