I am such a sucker for browned butter. If there is a dish on a restaurant menu with browned butter on it that’s what I’m having hands down!

This affection for browned butter I’m sure goes way back to when my family would go out to eat as the Old Spaghetti Factory. Have you ever gone there? It’s a fun little chain that of course has mostly spaghetti dishes on their menu and from what I can remember, really fun retro velvet chairs you could sit in as well as the coolest train car that that had tables in it. There’s a dish on their menu for Spaghetti with Browned Butter and Myzethera that I would always get! It’s really just three ingredients, but there is just something about browned butter that makes any dish taste and feel fancy which is what I am LOVING about this Butternut Squash Ravioli with Sage Browned Butter!

 Ever since Trader Joe’s released their fall goodies I’ve been so excited to try their butternut squash ravioli and OH MY GOODNESS they are insanely DELICIOUS! I don’t think I’ve ever really said that about ravioli before, but seriously go get some now! When thinking of a sauce to put on this butternut squash ravioli the only thing that sounded perfect was this dreamy browned butter. Every bite you guys just melts in your mouth! I feel like I can take no credit for how amazing this Butternut Squash Ravioli with Sage Browned Butter recipe is when I cook it because it’s really just a simple recipe that takes less than 20 minutes to make and is 6 ingredients! It must just be the magic of browned butter. 🙂

You of course can use any ravioli that you love or can find and this dish will turn out perfect. Both Costco and Trader Joe’s have so many yummy ravioli’s out right now! Also, be patient if this is your first time making browned butter. There’s a tiny tiny learning curve to it but once you know what to look for you’ll master it every time. Just have extra butter on hand if it’s you’re first time trying it. The worst case scenario is that you burn a batch and have to try again. 😉

Instructions
  1. In a large fry pan heat olive oil up over medium heat.
  2. Add the cubed butternut squash and sliced mushrooms to the pan. Cook covered stirring occasionally for about ten minutes or until butternut squash is fork tender. Turn heat down to low while you cook everything else. Set aside.
  3. Cook ravioli according to package instructions. When ravioli is done cooking drain and then toss with some olive oil so they don't stick together while you make the browned butter.
  4. In a small sauce pan or fry pan heat the butter up on low heat and then watch it like a hawk! No really, do not leave your butter alone. Stir occasionally as your butter slowly turns a caramel brown color and becomes really fragrant. Once you see that beautiful color and some light brown specs like the picture above remove from heat.
  5. Serve Ravioli with squash and mushrooms either on the side or on top and drizzle on the browned butter. Enjoy!
