Ingredients

cup
cooked quinoa in vegetable broth
about
2 cups
vegetable broth
quinoa

TBSP
olive oil

1/2 inch think round slices
butternut squash
salt and pepper to taste

butter

cloves
minced garlic

sage leaves
juice of 1 large
orange

vegetable broth

baby broccolini
Instructions
Cook quinoa in vegetable broth according to package instructions.
Heat olive oil up in a large fry pan over medium heat
Season butternut squash with salt and pepper and cook for 3 minutes on the first side.
Flip squash over and add in the butter, garlic,sage, orange juice, vegetable broth and baby brocoolini. Cook for 4-5 minutes.
Serve over cook quinoa and drizzle the pan juices over top. Enjoy!
