I’ve been reflecting quite a bit lately on the “why” of things. It may sound a little cheesy or even too self reflective. But our motivations for why we are doing what we’re doing matters.
Whether it’s a:
hobby
job
motherhood
sport
or schooling
The “why” is an underestimated motivator. Especially when our once passion has dimmed a bit. We tend to forget what inspired us to begin in the first place.
Reminding myself of why I even started this community at Grab Some Joy reignited and even lit a brighter flame in me of why I truly wanted to create this space. It’s for simple and delicious recipes like this Lemon Pepper Shrimp with Zucchini Ribbons that reminded me of my passion. Who new motivation could come from shrimp?! You just never know! 🙂
But for real, this simple little shrimp recipe recipe really did that! It’s in the planning and making of this recipe that really was so easy, healthy, and quick to make that reminded me that those qualities alone is why I love sharing and teaching. Why I’m passionate about what I share here! My heart for Grab Some Joy is just that. To share with you that healthy eating can be;

What is your “why”?
Figuring that out is so important, especially when a once passion has dimmed a bit. Remember your why and reignite that which sets your soul on fire! And enjoy this Lemon Pepper Shrimp with Zucchini Ribbons. It’s beyond delicious, easy, and is just a fun dish to usher in summer! And all the zucchinis you’re about to inherit this year. 😉
- 3 Tablespoons unsalted butter
- 2 cloves minced garlic
- 12-15 medium sized shrimp, deveined and peeled
- 2 teaspoons grated lemon zest
- lemon pepper seasoning to taste
- 1/2 teaspoon thyme
- juice of half a lemon
- 1-2 Tablespoons olive oil
- 2 medium zucchinis shaved into ribbons with a vegetable peeler
- salt and pepper to taste
- In a medium fry man, melt butter over heat.
- Add in minced garlic and cook until just fragrant. About a minute or two.
- Turn heat up to medium and add in the shrimp. Season the shrimp with the lemon pepper seasoning, lemon zest, and thyme. Pour the lemon juice into the pan.
- Cook shrimp for just a few minutes until they just turn pink. Turn the heat off while you make the zucchini ribbons.
- In another medium fry pan heat up the olive oil over medium heat.
- Stir in the zucchini ribbons and season with salt and pepper to taste.
- Cook stirring occasionally for 3-5 minutes.
