Add in minced garlic and cook until just fragrant. About a minute or two.
Turn heat up to medium and add in the shrimp. Season the shrimp with the lemon pepper seasoning, lemon zest, and thyme. Pour the lemon juice into the pan.
Cook shrimp for just a few minutes until they just turn pink. Turn the heat off while you make the zucchini ribbons.
For the Zucchini Ribbons
In another medium fry pan heat up the olive oil over medium heat.
Stir in the zucchini ribbons and season with salt and pepper to taste.
