These Cucumber Chipotle Tuna Boats have been most definitely been my food crush this summer! They are SO easy to make! Healthy and loaded with tons of protein! Super yummy and as a bonus, they fit perfectly in my coveted little glass Pyrex dishes. Because food that is already made and easily accessible is a major priority around here. š
I admit that until recently I’ve been been the biggest tuna fan. I grew up with my mom making tuna fish sandwhiches all the time and vaguely remember them being a popular commodity around the lunch table. Come to find out that it’s really not so much tuna that bothers me at all but rather pickles. Yea…even the smell of pickles is enough to leave me fleeing the room, haha! But these Cucumber Chipotle Tuna Boats are a total game changer in the absolute best way! I thinking it’s because they taste so healthy and refreshing all with a little chipotle kick!
Recipe Notes:
- I love using Persian Cumbers with this recipe because they are the perfect size and are super crunchy. Regualar cucumbers work great too if that’s all you can find but if given the choice definitely snag those cute little Persian Cucumbers!
- Feel free to kick the chipotle heat of in these Cucumber Chipotle Tuna Boats as much as you want! For me one to one and a half tablespoons of abodo sauce is perfect but if you’d like more heat just chop up one of those little chipotles and prepare for your taste buds to get a little jolt!

These easy and healthy Cucumber Chipotle Tuna boats are loaded with fresh greens and and protein making the perfect snack or lunch on the go!

- 6 small persian cucumbers or 2 regular sized cucumbers
- 1/3 cup finely chopped cucumbers
- 1/4 cup plain yogurt
- 1 tablespoon abodo sauce from a chipotle can with abodo cause *add more sauce or chop up a chipotle for more heat
- 1 can no salt added tuna fish
- salt and pepper to taste
- 1 cup chopped micro greens
- more fresh ground pepper to taste
- With a small spoon gently scoop out half of the insides of the cucumbers and place it in a bowl.
- In the same bowl stir together the scooped out cucumber with the chopped cucumber, tuna fish, yogurt, abodo sauce and salt and pepper.
- Fill your cucumber boats with desired amount of the chipotle tuna mixture. Top with micro greens and more fresh ground pepper to taste. Enjoy!
- Will keep in an air tight container like these my glass Pyrex dish for approximately 3 days.
