Cucumber Chipotle Tuna Boats

Ingredients
6
small
persian cucumbers or 2 regular sized cucumbers
1/3
cup
finely chopped cucumbers
1/4
cup
plain yogurt
1
tablespoon
abodo sauce from a chipotle can with abodo cause
*add more sauce or chop up a chipotle for more heat
1
can
no salt added tuna fish
salt and pepper to taste

cup
chopped micro greens
more
fresh ground pepper to taste
Instructions
With a small spoon gently scoop out half of the insides of the cucumbers and place it in a bowl.
In the same bowl stir together the scooped out cucumber with the chopped cucumber, tuna fish, yogurt, abodo sauce and salt and pepper.
Fill your cucumber boats with desired amount of the chipotle tuna mixture. Top with micro greens and more fresh ground pepper to taste. Enjoy!
Will keep in an air tight container like these my glass Pyrex dish for approximately 3 days.
