I’m always interested and excited to see some of the first new recipes of the year. Will it be a new new salad, smoothie, or latest Whole30 meal prep tip? Maybe even a “healthier” brownie? These all sound great to me! Does said new recipe have to do with how “motivated” that recipe developer is to kick start a healthy year? Or does it reveal a new or much needed check-up on a food sensitivity? Maybe it’s just a much needed refreshing switch from consuming so much holiday sugar that you just can’t take it any longer? Or maybe, it depends on your “season” of life” and who you’re feeding? Are you just feeding yourself or a brood of hungry teenage athletes? I’m guessing it could be any of these reasons or more than one. In my case, what recipes I look for often have to do with the season of life I’m in right now which is the season of feeding myself + husband+ two toddlers that I’m always trying to introduce new foods to. Sooo… Enter in these super delicious Apple Cinnamon Energy Bites!
These Apple Cinnamon Energy Bites are proudly representing my first recipe of the year because:
A.) My one very apprehensive eater is gobbling these up! As I mentioned earlier, I’ve got two toddlers that I’m always trying to introduce new foods to that are nutrient rich. And if my creativity is on point that day (rarely, but occasionally I think of something) that’s always a bonus! So far these have been a big hit, and thus a major success in the food learning journey of my oldest daughter. 2017 was the year that I really dug deep in finding ways help my “picky” eater. I thankfully came across an incredible resource and blog put out by a Pediatric Dietitian called Veggies and Virtue. Ashley’s knowledge and expertise about how to deal with “picky” eating has encouraged me so much! If this is something you’re in the thick of too, I really encourage you to check out her website.
B.) They are equally easy, nutrient rich and very much satisfying my leftover holiday sweets craving. (Don’t act like yours doesn’t exist, too.) 😉 These White Chocolate Cherry Bites also do the trick too! This journey of food blogging has slow, but I am greatly encouraged how far I’ve come. Apple Cinnamon Energy Bites

These delicious Apple Cinnamon Energy Bites are super easy, nutrient rich and will satisfy that sweet craving without the guilt!
In a large food processor or high speed blender, blend together the oats, ground flax seed, walnuts if using, and cinnamon until oats are fine.
Add in the dates, dried apple and a conservative amount of honey/maple syrup to start. Blend together until mixture comes together. If it's still too dry add in more honey/maple syrup until everything clumps together, see bottom photo. *If you accidentally add too much liquid add in a more oats.
Form into desired size balls and store in the refrigerator until ready to eat. Enjoy!
