In a large food processor or high speed blender, blend together the oats, ground flax seed, walnuts if using, and cinnamon until oats are fine.
Add in the dates, dried apple and a conservative amount of honey/maple syrup to start. Blend together until mixture comes together. If it’s still too dry add in more honey/maple syrup until everything clumps together, see bottom photo. *If you accidentally add too much liquid add in a more oats.
Form into desired size balls and store in the refrigerator until ready to eat. Enjoy!
