One of my all time favorite treats in the world is the chocolate chip cookie! I love them warm, gooey, and with crisp edges of course! It’s really one of the best things in life.
While I love chocolate chip cookies I also love making healthier alternatives that I do not at all feel bad about consuming daily! Enter: The BEST Chocolate Chip Cookie Energy Bites.
These little guys are SO DELICIOUS and easy! But there’s a little secret step that you cannot, I repeat CANNOT skip! This little step takes your plain ole’ energy ball to the next level I promise!

TO TOAST THE NUTS!
Toasting the nuts just makes this recipe! There really is something magical that happens when you toast nuts that makes even things like energy ball taste amazing! So friends, do not skip this step!
I’ll also add that this step will also make your house smell incredible. Almost as if you’ve been slaving baking in the kitchen for hours.

What I’m also loving about these little chocolate chip cookie bites is that they require pantry staples so you can pretty much make them every day if you wanted to! And…these mini chocolate chips! Seriously these are the cutest little chocolate chips! They are by no means a necessity for this recipe but they are just so adorable and mix super well into the balls.
To Store:
The BEST Chocolate Chip Cookie Energy Bites will keep for a week in the fridge and forever in the freezer. Okay, not forever, but at least a month if they last that long! 😉 It’s as if you’re stowing away extra chocolate chip cookie dough, only healthier!

Ingredients
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/2 cup cashews
- 1/3 cup whole oats
- 10-12 pitted medrool dates
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon ground flax (optional)
- 1/8 cup pure maple syrup more if necessary if the mixture is still too dry
- 1/8 cup mini chocolate chips regular are just fine, the minis just mix in a little better.

Instructions
- In a large fry pan over low heat toast the nuts for 3-4 minutes or until very fragrant but not browning. Watch VERY carefully because they can burn quickly.
- Let the nuts cool for a couple of minutes and then thrown them into a food processor.
- Blend up the nuts until they resemble the look of course coffee grounds then add in the dates, pure maple syrup, pinch of sea salt, vanilla extract and flax if using.
- Roll the mixture into individual sized balls. Makes about 10-14 balls depending on size.
