I typically eat the same things for breakfast every week. Do you? It’s usually pretty healthy, but certainly nothing fancy. We’re talking oatmeal, yogurt, and Minnie Mouse pancakes because well…my sweet toddler LOVES Minnie! She’s pretty famous around here so weekly Minnie pancakes happen often using the most delicious pancake mix in the HISTORY OF TIME. Not kidding! They’re called Kodiak pancakes and friends, they are so so good! Have you tried these? They are full of protein and all without of the crazy unnatural ingredients that many pancake mixes carry, yes!! But when I’m not eating Minnie’s ears I have discovered a new breakfast love.
May I introduce to you the most AMAZING Sweet Potato Power Breakfast!!
Look out world! This mama has kicked up her breakfast game in a HUGE way! Since I am now chasing after two little ones I have come to the realization that I’ve GOT to be feeding my body a POWERFUL breakfast if I’m ever going to survive keep up with these two sweet girls! So Sweet Potatoes Power Breakfast to the rescue!!!! Or as I affectionately call it, “Mama’s Power Breakfast!”
Okay, here are the stats on this almighty powerful breakfast that I’m sure will be a new breakfast favorite, or even dinner favorite. Because breakfast for dinner is a pretty life savor when you’re in a dinner crunch!
A.) It’s quick! Thank you eggs for always being my go-to quick meal!
B.) It’s full of rich antioxidants, vitamins, healthy fats and protein! Nothing is left out of this scramble! You will be feel SO GREAT knowing that you are feeding your body well!
C.) It is so very delicious and satisfying! Yes, satisfying. You WILL feel full but in a very good, I just ate something so healthy for my body I’m not going to be hungry for hours upon hours way! (Whew!)
D.) It’s adaptable! This Sweet Potato Power Breakfast is awesome because it’s super forgiving to whatever ingredients you prefer or have on hand. Get creative in your usage of protein and fresh greens! Next time for example, I might try tofu instead of chicken sausage and kale instead of Swiss chard and spinach. Yum!

- 1 small sweet potato cubed
- 1/2 teaspoon turmeric
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cinnamon
- 1 Tablespoon coconut oil
- 2 Tablespoons water
- 1/2 cups diced chicken sausage I used the True Story Organic Italian Chicken Sausage from Costco
- 3 large eggs whisked together
- 1 handful mixed greens I used a combination of spinach and Swiss chard
- 1 half avocado
- pinch sea salt
- In a medium sized bowl, combine the cubed sweet potatoes and spices together.
- Heat the coconut oil up in a large fry pan over medium heat. Add the sweet potatoes and water. Cover and cook for 10 minutes stirring occasionally.
- Add in your chicken sausage, cook an additional 5 minutes or until sausage is cooked through.
- Next add your eggs to the pan with the chicken sausage and sweet potatoes. Stir for a few minutes until eggs are scrambled. Fold in your mixed greens and cook an additional minute.
- Serve your sweet potatoes, chicken sausage, and eggs together in a large bowl or plate. Top with sliced avocado and a pinch of sea salt. Enjoy!
