I love lunches that look and taste delicious. I love lunches that I can whip up in a minimal amount of time, take little effort, yet look like I was slaving in the kitchen.When I need to be on the go, I love lunches that I can throw in my not so cute adult lunch box, ahem, plastic grocery bag… and be on my way. If you’re making this heavenly Sun-Dried Tomato Chicken Wrap for the week, here are 5 extremely awesome time saving tips! Because, we like all things time saving around here. 🙂
1. Buy one Rotisserie chicken and shred all of it into bite sizes. Yes, I know it’s takes a tad bit of time up front, but I promise you you’ll be so glad you did. Store in an airtight container.
2. Make one big batch of the sun-dried tomato cream cheese spread. Store in an air tight container as well.
3. Be sure to get the WHIPPED cream cheese that’s in the container, NOT the block of regular cream cheese. It will mix and spread much easier.
4.Get your Swiss cheese from the deli and ask them to slice it thin for sandwiches. Leave that cheese slicer in the drawer!
5. Buy pre-washed spinach. If you buy a spinach bunch give it a rough chop and store in a bag or air tight container.

- 1/3 cup whipped cream cheese
- 1/2 cup oil packed sundried tomatoes
- 1/4 cup chopped green onions
- 1/2 teaspoon fresh ground pepper
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon fresh ground pepper
- 4 slices swiss cheese
- 2 cups fresh spinach
- 2 cups shredded rotisseri chicken
- On a large cutting board chop up the sun dried tomatoes, green onions, and chicken into bite sized pieces.
