I have always liked my granola a little nutty (give me all the good healthy fats).  And since my oldest daughter Claire has taken to a new and totally left field liking to nuts, this mama is basically trying to put them in EVERYTHING she can possibly think of, haha! How sneaky, I mean smart…can a mom be?! Thankfully, this insanely good Nutty Pumpkin Spice Granola was a huge hit! So I’m going to call that a mom win which gives me a good excuse to keep up with this granola baking, pumpkin spice candle smelling hobby. 🙂

Because how can you not love the taste and aroma of toasted nuts covered in honey and cinnamon?! Pure breakfast (or anytime really) bliss I tell you!

  1. Preheat Oven to 300 degrees and line a baking sheet with parchment paper or a slip mat.
  2. In a small bowl melt coconut and honey together in the microwave. Pour over granola mixture and stir until everything is coated.
  3. Sprinkle the pumpkin pie spice, cinnamon and sea salt over the granola and give it another through stir.
  4. In a large bowl stir together the oats, walnuts, pumpkin seeds, pecans, cashews, hemp hearts and ground flax.
  5. Spread evenly onto your pan.
  6. Bake 20-25 minutes or until nuts are just turning brown. Watch closely, as the nuts can burn quickly.
