There’s nothing but selfish ambition going on with this Carrot Ginger Chopped Chicken Salad!
It’s true, the intentions for this salad was about me and my desire need to get more veggies in my diet. Anyone else with me?!
Now day in and day out I would say that I overall have a consistently healthy diet. I try to err on the 80/20 rule. With 80% of the time I eat a mostly Paleo diet and 20% of the time you can find me stealing my kid’s goldfish crackers and making these insanely good dark chocolate brownies! But for some reason veggies before dinner is where I struggle.
Like really struggle!
Not because I dislike vegetables, I really love most veggies…
except for beets!
I just CAN’T do beets! I know there are beet lovers out there, and I do not understand you….they taste like the dirt in my garden!
But what I do love are our good old friends carrots and broccoli!
So I decided to vamp up this sometimes overlooked duo! And trust me when I say:
This Carrot Ginger Chopped Chicken Salad will make these once boring vegetables, famous again!
Now I admit I’m usually a cooked broccoli kinda gal but now that I have tried riced broccoli, (trendy name for a vegetable that’s been grated) I’m all on board the raw broccoli train! I opted to make my prep work even easier so I sprung for the riced broccoli from Trader Joe’s. You can most definitely buy a head of broccoli and grate it with a box grater the same way you will shred your carrots anyways, but if you just want that extra step of convenience, the bagged rice broccoli is worth it!
And if you want to continue making your life easier, use regular carrots. Not baby carrots like I did, or you’ll be grating for awhile…but hey, you can at least say you worked for this salad, ha! But of course it’s all the same! And when you’ve won the grating vegetables war, whether is was short or a little longer, you will end of with this delicious Carrot Ginger Chopped Chicken Salad and it will be so worth it! Enjoy!
- 1 cup shredded carrots
- 1 cup riced brocolli *buy prepacked or use a box grater
- 1 small diced avocado
- 1 cup cooked shredded chicken
- 1 orange juice squeezed out
- 1 Tablespoon orange zest
- 1 small diced shallot
- 1 teaspoon grated fresh ginger
- 1 1/2 Tablespoons honey
- 1 Tablespoon Tamari Soy Sauce *gluten free soy sauce
- 1 Tablespoon Rice Vinegar
- 2 teaspoon sesame oil
- Combine the carrots, broccoli, avocado, and chicken in a large bowl.
- In a mini food processor or blender, blend all of the ingredients for the dressing until well combined.
- Pour desired amount of dressing over the salad and enjoy!
