Friends, you NEED this Blueberry Citrus Salad in your life!
Because it’s practically been summer in here in Portland and I’ve I’ve got my 90’s summer playlist on Pandora playing non-stop. We’re talking temperatures in the 90’s!! Whew! I’m totally a hot weather loving girl. Send me to a tropical beach or a hike in the beautiful desert and I’ll only leave if you make me. So when it’s hot here I pretty much whip up every kind of summer dish I can think of. I’ll admit, I have no self-control when it comes to summer food; BBQ chicken, grilled Salmon, grilled corn on the cob, grilled zucchini, okay….anything grilled, it’s all prone to overindulging. And who’s idea was it to market “personal water melons”? Pure genius I tell you! My pregnant belly pretty much looks like a personal water melon right now so it is totally okay that I consume the whole thing right?! And I do I really have to share THIS magical Blueberry Citrus Salad too? Maybe if you ask nicely…
It’s totally packed with fresh greens, crunchy cucumbers antioxidant rich blueberries, vitamin C rich orange juice, fat healthy walnuts, and the mighty chia seed. Friends, I’m totally hooked on the whole chia seed craze. I seriously will incorporate them whenever I can because they are soooo good for you and easy to hide in your oatmeal, cereal, smoothies, etc. These mighty little seeds also contain omega-3’s, fiber, protein, and antioxidants! chia power I tell you!
I will also mention that this salad is also super gorgeous!! I know looks aren’t everything, but when it comes to my salad, I’m not gonna lie, I’d much rather eat a pretty looking salad. And if it also carries with it a stellar nutrition punch, it’s a win win!!

- 4 cups mixed greens
- 1 medium cucumber chopped
- 2 kiwies chopped
- 1/2 cup blueberries
- 1/3 cup chopped walnuts
- 1 tablespoon orange zest
- 1 large orange, juice squeezed all out
- 2 tablespoons white wine vinegar
- 2 tablespoons honey
- 1 tablespoon olive or avocado seed oil
- 2 teaspoons chia seeds, or poppy seeds
- Combine all salad ingredients together in a large bowl.
- With a citrus zester or fine cheese grater, zest the orange and then squeeze out as much of the juice as you can get.
- In a small jar with a lid, or a small bow, mix together the orange zest, orange juice, white wine vinegar, honey, and chia seeds. Shake well in a jar or whisk vigorously until everything is mixed well.
- Serve salad with the desired amount of dressing.
