These Baked Chicken Fajitas have been on my weeknight menu for a month now and I pretty much have no intention of taking them off anytime soon! Like the Pesto Chicken with Balsamic Tomatoes recipe posted last month these Baked Chicken Fajitas are just too easy to whip up. Everything is cooked and served in less than 45 minutes and they require you to only dirty one dish! I’m thinking this might have to be a new requirement for all weeknight meals. What do you think?!
This spring as been a bit of a busier season for our little family especially with my oldest taking an early evening swim class. By the time I get home it’s basically dinner time so I’ve really been needing meals that are super easy to prep and cook like these Baked Chicken Fajitas and the Pesto Chicken with Balsamic Tomatoes. And by prep I literally mean 5 minutes maybe even less if your knife skills are iron chef impressive. I’m still working on mine. 😉
To make these Baked Chicken Fajitas you just need:
chicken breasts, your favorite bell peppers (red and orange are my favorite)
onions (red onions hands down for me)
olive oil and spices!
And of course your favorite fajita toppings! My absolute must haves for toppings are always avocado or guacamole, cilantro, salsa and restaurant style tortilla chips. Because what’s Mexican night without chips!

- 1 tablespoon olive oil
- 1 small chopped red bell pepper
- 1 small chopped orange bell pepper
- 1 small chopped red onion yellow onions work too
- 1 boneless skinless chicken breast split in two
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon fresh ground pepper
- Preheat oven to 375 degress
- In a medium sized making dish stir together the olive oil, red and orange bell peppers and red onion.
- Place chicken breasts in the center of the baking dish moving aside the peppers and onion if needed.
- In a small bowl, stir together all of the spices then rub all over the chicken breasts covering both sides. Or simple just add spics individually to the chicken and rub in. It does't necessarily need to be mixed together.
- Bake covered for 40 minutes or until chicken is cooked though.
- Serve with cilantro, avocado,and salsa if desired. Enjoy!
