It’s almost tomato season it’s almost tomato season!!
Which makes me very very excited because that means it’s basically Caprese Salad season! So the moment I saw these BEAUTIFUL Roma tomates at Trader Joe’s last week I had to snag them and pair them with one of my favorite foods ever. Avocado! Which I thought would make a great addition to the traditional Caprese salad. And it does!
Because growing up Caprese Salad was such a staple dish in the summer for my family. If there were fresh juicy tomatoes and basil available whether from our garden or because it was in season, Caprese Salad was made almost weekly! Food is memories am I right?!
So you’ll probably notice that there’s no fresh mozzarella in this Avocado Caprese Salad…
Trust me when I say that I absolutely LOVE fresh mozzarella cheese and pretty much all cheese in general. I am in no way trying to excommunicate mozzarella cheese from this infamous salad. BUT ever since I had our second daughter let’s just say that dairy doesn’t necessary love me as much as I love it. (Insert the crying emoji!) This of course has been forcing me to adopt more of a dairy free diet which has overall been fine since I discovered my love for coconut. But goodness, limiting my cheese intake has been hard! So….please by all means throw in some yummy fresh mozzarella cheese in with this Avocado Caprese Salad. It will be delicious and I will be jealous.

- 1 small sliced avocado
- 1 medium sliced roma tomato
- balsamic vinegar or balsamic glaze to taste I used Trader Joe's Balsamic Glaze
- olive oil to taste
- sea salt or Himalayan salt to taste
- fresh ground pepper to taste
- fresh basil cut into ribbions
- Arrange avocado and roma tomates on a plate.
- Drizzle desired amount of balsamic and olive oil on top.
- Sprinkle desired amount of salt and black pepper on top.
- Finally top with basil. Serve and enjoy!
