So THIS Vanilla Orange Pistachio Parfait as of late has become my guilt free, mommy-only, while child is napping, treat. I’m sharing it here. Shhhhh… don’t tell my toddler and her friends!

Ingredients
- 1 cup vanilla yogurt
- 1 medium orange
- 2 teaspoons honey
- 1 teaspoon grated orange zest
- 1 tablespoon pistachios
Servings: person
Instructions
- Grate orange zest and set aside. Peel and slice the rest of orange into bite sized pieces
- In a small bowl stir together the orange zest, half of the oranges, half of the yogurt, and half of the honey.
- Top with the remaining yogurt, sliced oranges, honey, and the pistachios.
- Serve and enjoy!
