Instructions
  1. Heat olive oil up in a medium fry pan over low to medium heat. Cook garlic for one minute.
  2. Add in the riced cauliflower and cook stirring occasionally for 3-4 minutes.
  3. Turn heat down to low and stir in the pesto. Keep on very low heat or warm while you make everything else.
  4. Heat butter up in a large fry pan over medium heat. Add in the mushrooms when the butter just starts to bubble.
  5. Cook mushrooms until soft and golden, roughly 5 minutes.
  6. Stir in the balsamic vinegar sauce and then turn the heat down to low heat while you make the chicken.
  7. Heat olive oil up in a large fry pan over medium/high heat.
  8. Pat chicken dry with a paper towel and then season with salt and pepper.
  9. Add chicken to the pan and cook 4-6 minutes per side or until cooked though.
  10. Serve chicken on top of the pesto cauliflower rice and top with the balsamic mushrooms. Enjoy!
