Ingredients
Pesto Cauliflower Rice

olive oil

cloves
chopped garlic

cups
riced cauliflower
1/4
cup
pesto sauce
Balsamic Mushrooms

Tablespoons
butter

sliced mushrooms
2
Tablespoons
balsamic vinegar

Tablespoon
water

teaspoon
brown sugar

olive oil

chicken cutlets or 1 large chicken breast halved.
salt and pepper to taste
Instructions
Heat olive oil up in a medium fry pan over low to medium heat. Cook garlic for one minute.
Add in the riced cauliflower and cook stirring occasionally for 3-4 minutes.
Turn heat down to low and stir in the pesto. Keep on very low heat or warm while you make everything else.
Heat butter up in a large fry pan over medium heat. Add in the mushrooms when the butter just starts to bubble.
Cook mushrooms until soft and golden, roughly 5 minutes.
Stir in the balsamic vinegar sauce and then turn the heat down to low heat while you make the chicken.
Heat olive oil up in a large fry pan over medium/high heat.
Pat chicken dry with a paper towel and then season with salt and pepper.
Add chicken to the pan and cook 4-6 minutes per side or until cooked though.
Serve chicken on top of the pesto cauliflower rice and top with the balsamic mushrooms. Enjoy!
